hOw tO make cheese tart?

pastry is a very different part of cooking. i always found it very hard to executed. well, for this one time we (me & my sis) manage to bake tart...fuh... a real mess... i guess i never meant to be a pastry chef... huhuhu....

after a few accident we make it through without any injuries.. hehe.. so let see the recipe for  
cheese tart....

obedient ingredient:

cheese filling
250 g cream cheese (Philadelphia / Anchor)
50 g sugar
1 whole egg
1 cup milk
vanilla essence

meringue
1 egg white
2 tbsp sugar

dough
50g unsalted butter
25 g sugar
1 whole egg
100g bread flour

to make fiiling
1st u need to beat cream cheese until it became smooth before u add in sugar. mix them thoroughly until fluffy. combine egg with milk. add bit by bit into the chese + sugar mixture. stir.

do u ever make meringue? combine sugar and egg white. then beat them until it became foam like. to test whether it is ready.. lift bowl at ur head level. then invert the bowl. if there's no spill... u already successful in doing it..


add meringue into the chese mixture... use folding technique, dont stir to much. ok... ur filling is done.




to make dough
beat butter with sugar until smooth and turn into white. then add egg. beat for another 5 minutes. add in flour bit by beat. this butter dough will look sticky and shining. dont be afraid.. it suppose to look like tht.... wrap them in plastic  & store them in fridge for 3 hours. this is crucial steps to make sure that the dough wont stick to ur mold.

roll dough into thin stripe. then measure the size of ur mold. make sure u cut dough larger than the mold size. place them inside the mold.



bake them in hot oven (200 C for 5 minutes). let them cool for 5 minutes before pour in the filling. only pour 3/4 part. dont let them overloaded.

 bake again for another 20 minute. until it turn brown and the filling is cooked. let it cool for an hour before removing the mold.                     gud luck!

gulai darat ikan masin Cik Wan...

 masakan melayu yg mudah yet sedap... give it a try, im sure u want more after tht.

Ingredient nye :
2 potong isi ikan masin (blh jgk gunakan ikan kering)
2 ulas bawang merah
3 ulas bwang putih
3cm lengkuas
3cm kunyit hidup
5 biji cili padi
4 cili merah / cili hijau
kacang panjang n timun
3 cup santan
garam (jgn ltak garam dulu..sbb ikan tu sndri da masin)
gula (secukup rasa)
3 asam keping


 Cara2 nya:

traditionally tumbuk bawang merah, bawang putih, lengkuas.kunyit n cili padi sampai lumat..
but..my mum's way...campak sume (termasuk santan) kedlm blender..hahaha..easy right..?
then ltak dlm pot...

using low heat...
x pyh nak tgu sampai kuah mndidih.. trus je masukkn ikan masin td..

followed by kacang panjang, timun  dan cili merah/hijau
masukkn skli asam keping 

 kacau n tgu smpai kuah mndidih..
rase la..kalau  x cukup garam,  tambahkn garam & gula secukup rasa..

tadaaa..da siap gulai darat ala mama saya...hehe.. give a shot!

yuMMy tauhu p0k....

we usually found tauhu pok in chinese dish, and mee kari.. well this time, we going to stuff this taufu with meat. we once watch it on tv (AFC become our main source of entertainment at home), they were doing the same dish with different style. now its available in our blog using very simple method.

bahan2 yg dperlukan adalah :
10 biji tauhu pok 
300g daging kisar (blh gne daging/ayam)
1/4 capsicum merah n kuning (blh jgk gne cili padi bg sape yg suke pedas)
5 biji bawang merah
3 biji bwang putih
1 tube egg taufu
daun bawang n daun sup
1/2 sudu garam



how to do it..my mum's way :

firstly.. potong tauhu pok kpda 2 bhgian.. then kluarkn isi tauhu tu.. 
then blend everything else except kulit tauhu (tauhu pok)
then.. goreng bhan yg blend td using a bit of oil..
 tadaa..ini lah hasilnye..hehe

ok..skrng kite fill inti yg tlh dimasak td ke dlm tauhu pok..
make sure the stuffing fully occupied inside the tauhu pok


heat the oil...
then kite kne wt batter pulak.. simple je..jgn tkut..(1/2 cup tepung gandum + 2 sudu tpung jagung + 1/2 cup air..) batter tu x blh pkat or cair sngat..
celup2kn tauhu pok itu dlm batter n goreng for 10 minutes.

its ready.. stuffed tauhu pok..hehe

malay cuisine....

hi guys... im going to introduce new recipe... basically its originated from pantai timur (kelantan & terengganu). so this how u make kuih b00m. tune to malay.... hehe... i like the taste.. rasa kelapa and pulut in ur mouth with slight taste of fish filling... yummmy!


so ingredient needed are
 filling:
3 ekor ikan
6 ekor udang
2 cili merah
10 biji cili padi
1 bawang besar,3 bawang merah, 2 bawang putih
50 g udang kering 
2 sudu gula
1 cup santan

doh: 
200 gm kelapa parut (putih je tau)
200 gm tepung pulut
1 sudu gula
1/2 sudu garam 
1 cup water( may need more. depends on necessity)
how to make it....


Filling


rebus ikan & udang for 10 minit. then, perisikan ikan & udang. buang tulang and kulit.
mix all ingredient inside blender. blend thoroughly.
masukkan dalam pot, with salt, sugar and santan.
let it cook for 15 mnts.

for dough

mix everthing in 1 bowl. add water. and kneed thoroughly. place them aside.
  resemble them... this is how you do it... 
last, u need to fry them in hot oil for 10 minutes, low heat.u know its ready when u heard pop sound ( dari sini la dpt name kuih boom, i guess).
serve & ready to eat!

Lasagna!

ive been dwelling to update de blog.... but it seems there no enough time for me... classes to attend and asgment due around the corner making me miserable sometimes... hehe... but its no xcuse for not updating.... 

ive done this dish last week & a week b4 tht.... my sis keep bugging me to do more... saying its not enough for everybody (yea rite... there's only 5 of us).... for me, lasagna is a combination of pasta n the sauce.. very easy to make... & i can ensure u cant get enough of it....

Obedient  ingredient:
lasagna sheets... ( im using 20cm x10cm  casserole so i would need around 4 sheets)

Tomato sauce
125 g tomato puree
2 fresh tomatos
4 cloves of garlic
1large onion
200g mince meat ( u can change to ur preference,  can used chicken, lamb, or even turkey)
1 bay leaves

Béchamel sauce
well this one is very easy.... all u need is same amount of butter and flour. ( eg. 1 cup butter - 1 cup butter).
1 cup of milk

Cheese
any type of cheese.... cheddar would do.

hw you do it ......

chop garlic & onion..... if its so troublesome.... just used ur chopper / food processor. then saute them until they turn brown. add in mince meat. chop fresh tomato then add them in. stir evenly.next put in ur tomato puree & bay leaves.keep on stirring until it is boil. let it boil for another 5 minutes... then it is done. let it cool.

in other pan, melt butter and add in flour. keep stirring. it will coagulate. when this happen, add in milk. stir until u got smooth consistency. let it cool.

pasta sheets need to be boil for 2 minutes.

so the resemblance time.... fun!

1st layer in ur casserole is the sheets, the top with tomato sauce. on top of  tomato sauce is the Béchamel sauce. and lastly cheese. keep layering ur lasagna until u finish ur lasagna sheets. but make sure that the layer doesn't exceed the casserole.

then, baked it at 190 C for 20 minutes. u'll know its done when u see the top cheese layer melted and brown.





let it cool down for 10 minutes, cut n serve!

FrOm garden tO kitchen.....

hi again....ive got something to share with u guys today....well in mlay culture we are very familiar with ros essence or dlm bhs melayunyer sirap. ... hw about u consider Roselle as substitute to our daily drink? It is believe tht roselle have alot of vit-C & antocyanins.... so for whom who wats to maintain their youth & beauty... turn to this alternative drinks.... okey now... let me show u haw to prepare this drink....


This is the flower... usually juices and drinks are made using this part of the plant. this is from our very own garden...
nice isn't it?

wat u need is....

200g of roselle petals
6 cup sugar
4 cups of water

So 1st, u need to remove the petal from flower.


Then, u rinses the petal to clean it…. Sieve….  Place them in the pot with de sugar. Add water.

Bring it to boil for 20 min. the petal would dissolve abit & it will turn into bright purplish color. U might have seen the same color before as it is similar with the famous RIBENA. It also have almost the same taste.


now, basically we're done.... next sieve the mixture & only take de juice. this will become ur cordial... need to add up water and some lime juice to make it more tasty. dont have any lime in de fridge???? u might used lemon for a change... any acidic element would do the trick.

today's recipe: western cooking

chicken chop with brown sauce serve with mashed potato and baked vegetables

                                                          

recipe for de day! craving for western food, making me spend the whole morning preparing this dish......
not very hard to make.... as long as u like to be in kitchen...

Chicken:
drumstick - debone and flated into thin filet. marinated with salt pepper & a bit of mixed herbs ( u can always used rosemary which are suitable 4 chicken n red meat). bear in mind not to overseason it!

coat chicken with any kind of flour xcept corn flour.... lol.... hehe... then dip into egg mixture  n lastly bread crumb ( @ oat, cereal, or bake old bread)

last but not least, fried the coated chicken till it is brown estimately for ~5 minutes.

Mashed potato:
very easy ....
 boil 4-5 potatos until it is soft ( try to poked with a knife or fork to test the testure). sieve the potato n place them back in the pot. using low heat mashed it in the same pot n add a cup of milk , table spoon of butter, a pinch of salt & pepper. continue mashing until it is well blend.

Baked vege & corn:
u can used any type of vege... but mostly we use brocoli, carrots, peas, capsicum and onion. season them with salt, pepper & oil. just put in a tray then place in ur oven.. baked for 5 min.

Brown sauce:
chopped 1 onion,3 cloves of garlic. saute them with some oil until it is fragrant n brown in color. next add in 4 tablespoon of barbeque sauce (ready made). add 2 - 3 cup of stock according to preferrence. season it. lastly add roux / corn starch. whisk until thick enough.
*roux : 3 tb spoon butter + 3 tb flour... cook until become a paste. used of thickening agent.

lamb chop with black pepper saucewith mashed potato and baked vegetables


well...  i dont usually ate lamb... but my sis & my adorable youger brother love it... so to pleased them... i serve lamb chop for lunch today. here's the recipe for lamb chop.... basically the side dish is the same xcept for sauce.

Lamb:
buy any portion of lamb tht u fancy. then season them with salt & pepper. grill the lamb for 2 minutes each side (depends on ur taste). there u go... ur lamb is ready.

Black pepper sauce:
chopped 1 onion,3 cloves of garlic. saute them with some oil until it is fragrant n brown in color. next add in 2 tablespoon of crush black pepper. add 2 - 3 cup of stock according to preferrence. season it. lastly add roux / corn starch. whisk until thick enough.
*roux : 3 tb spoon butter + 3 tb flour... cook until become a paste. used of thickening agent.
